Ingredients

  • 2 pieces pork shanks (osso buco-style cuts, about 1.5 lbs total)
  • ¾ cup German beer (pilsner or lager)
  • 2 tbsp whole-grain mustard
  • 1 tsp caraway seeds
  • 1 tsp smoked paprika
  • ½ cup beef broth
  • 4 cups red cabbage, sliced thin
  • 2 tbsp apple cider vinegar

    Pat pork shanks dry. Season all over with salt and black pepper.

    Heat olive oil in a 12-inch cast iron skillet over medium-high until shimmering, about 90 seconds.

    Sear shanks 3–4 minutes per side without moving until deep golden brown on both sides.

    Pour beer and broth around the shanks. Whisk in mustard, caraway, and paprika. Slide skillet into a 425°F oven.

    Roast uncovered 12–14 minutes until pork is tender and sauce is syrupy. Meanwhile, toss cabbage with vinegar and a pinch of salt.
