Ingredients

  • 2 4-oz pieces boneless pork loin chops or cutlets
  • ⅓ cup all-purpose flour
  • 1 large eggs
  • ¾ cup panko breadcrumbs
  • 2 cups napa cabbage, shredded
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce

Instructions

  1. 1

Place pork between plastic wrap. Pound to 1/4-inch thickness with a meat mallet.

  2. 2

Set up three shallow bowls: one with flour, one with beaten egg, one with panko. Season flour with salt and pepper.

  3. 3

Coat each pork piece in flour, then egg, then panko, pressing gently so breadcrumbs stick.

  4. 4

Heat 0.5 inch oil in a 12-inch skillet over medium-high until shimmering, about 2 minutes.

  5. 5

Fry tonkatsu 3-4 minutes per side until deep golden brown and internal temp hits 145°F.

  6. 6

Mix ketchup and Worcestershire sauce. Arrange cabbage on plates, top with tonkatsu, drizzle with sauce.
