Ingredients

  • 6 oz pork belly, sliced 1/4-inch thick
  • 4 whole steamed bao buns (store-bought or frozen)
  • ⅓ cup pickled mustard greens (or kimchi, drained)
  • ¼ cup roasted peanuts, crushed
  • 2 tbsp hoisin sauce
  • ½ whole scallion, sliced thin (optional)

Instructions

    Heat a skillet over medium-high until it shimmers. Add pork belly slices without moving them — let them sit until the bottoms turn golden and crispy, about 3 minutes.

    Flip each slice and cook until the second side is golden and any liquid evaporates, about 2 more minutes. Transfer to a plate.

    Warm the bao buns in the microwave for 30 seconds if they're cold, or steam them for 1 minute in the skillet with a splash of water (covered).

    Open each warm bun and spread a thin layer of hoisin inside. Add 1–2 slices of crispy pork, a pinch of pickled mustard greens, crushed peanuts, and scallion if using.

    Serve immediately while the buns are warm and the pork is still crispy.
