Ingredients

  • 3 count large egg whites
  • 150 g granulated sugar
  • 1 tbsp cornstarch
  • 1 cup heavy cream
  • 1.5 cups fresh mixed berries (raspberries, blueberries, strawberries)
  • ½ cup cherry compote or jam (store-bought)

Instructions

    Preheat oven to 300°F. Line a baking sheet with parchment paper.

    Beat egg whites with a hand mixer on high until soft peaks form, about 3 minutes.

    Gradually add sugar while beating until stiff, glossy peaks form, about 4 minutes.

    Fold in cornstarch gently with a spatula until just combined.

    Spoon 4 mounds onto parchment, then use the back of a spoon to create a shallow well in each.

    Bake until pale and crispy, about 15 minutes. Cool completely on the pan.

    Whip heavy cream to stiff peaks with a hand mixer, about 2 minutes.

    Warm cherry compote in a small saucepan over low heat for 2 minutes.
