Ingredients

  • 8 oz fresh oysters, shucked
  • 3 large eggs
  • 2 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1.5 tbsp chili paste or sambal oelek
  • ½ tbsp white vinegar
  • 1 whole scallion, sliced thin

Instructions

    Whisk eggs with cornstarch and soy sauce until smooth and no lumps remain.

    Heat 2 tbsp neutral oil in a 10-inch skillet over medium-high until shimmering, ~90 seconds.

    Pour egg mixture into the skillet and scatter oysters evenly across. Cook 3 minutes without stirring.

    Flip the omelette carefully. Cook 2 more minutes until the second side is golden and set.

    Slide onto a plate. Whisk chili paste with vinegar and drizzle over the top while still hot.
