Ingredients

  • 3 medium yellow onions, sliced thin
  • ¾ cup chickpea flour (besan)
  • 1 medium green chile, minced
  • 1 pinch (to taste) salt and black pepper
  • 1 cup (for frying) neutral cooking oil
  • ½ cup plain yogurt

Instructions

    In a bowl, toss sliced onions with chickpea flour, minced green chile, salt, and pepper until evenly coated.

    Add 3 tbsp water, 1 tbsp at a time, mixing gently until the mixture holds together but stays loose and crumbly.

    Heat oil in a deep skillet or wok to 350°F (or until a pinch of flour sizzles immediately when dropped in).

    Drop spoonfuls of the onion mixture into hot oil and fry 2-3 minutes per side until deep golden brown and crispy.

    Transfer bhaji to a paper-towel-lined plate. Serve immediately with cool yogurt, tamarind chutney, and lime wedges.
