Ingredients
- 3 medium yellow onions, sliced thin
- ¾ cup chickpea flour (besan)
- 1 medium green chile, minced
- 1 pinch (to taste) salt and black pepper
- 1 cup (for frying) neutral cooking oil
- ½ cup plain yogurt

In a bowl, toss sliced onions with chickpea flour, minced green chile, salt, and pepper until evenly coated.

Add 3 tbsp water, 1 tbsp at a time, mixing gently until the mixture holds together but stays loose and crumbly.

Heat oil in a deep skillet or wok to 350°F (or until a pinch of flour sizzles immediately when dropped in).
