Ingredients

  • 1.5 cups all-purpose flour
  • ½ lb ground beef (or chicken)
  • 1 medium yellow onion, diced
  • 2 whole eggs
  • 1 tsp garam masala or curry powder
  • 3 tbsp neutral oil for frying

Instructions

    Mix flour with 0.5 cup water and a pinch of salt until a shaggy dough forms, then knead 2 minutes until smooth.

    Brown ground beef in a skillet over medium-high heat, breaking it apart with a spoon, until no pink remains, ~4 minutes.

    Add diced onion and garam masala to the beef; stir until onion softens, ~2 minutes. Transfer to a bowl and cool slightly.

    Divide dough into 2 balls. Roll each into a 6-inch round; spread half the filling on one half, crack an egg on top, fold in half.

    Heat 1.5 tbsp oil in the skillet over medium-high until it shimmers. Fry one murtabak 3 minutes per side until golden and crispy.

    Repeat with remaining oil and murtabak. Serve hot with sambal or sweet chili sauce.
