Ingredients

  • 4 eggs egg whites (from 4 large eggs)
  • 150 g granulated sugar
  • 1 tbsp cornstarch
  • ½ tsp white vinegar
  • 1 cup heavy cream
  • 2 cups fresh berries (strawberries, blueberries, raspberries)
  • 2 tbsp powdered sugar

Instructions

  1. 1

Whip egg whites on high speed until soft peaks form, about 2 minutes.

  2. 2

Gradually add granulated sugar, then cornstarch and vinegar. Beat until stiff, glossy peaks form, ~3 minutes.

  3. 3

Pipe meringue into 4 nest shapes on a parchment-lined sheet pan using a piping bag, creating a 3-inch base with raised sides.

  4. 4

Bake at 250°F for 18–20 minutes until pale and crispy but not browned. Let cool completely on the pan.

  5. 5

Whip heavy cream with 2 tbsp powdered sugar until stiff peaks form, ~2 minutes.

  6. 6

Spoon whipped cream into each cooled meringue nest and top with fresh berries. Serve immediately.
