Ingredients

  • 4 nests store-bought meringue nests
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 1.5 cups mixed fresh berries (strawberries, raspberries, blueberries)
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 cup fresh berries (for topping)

Instructions

    Heat berries, sugar, and lemon juice in a small saucepan over medium-high until simmering and syrupy, about 4 minutes.

    Remove from heat and let compote cool while you whip the cream.

    Whip heavy cream, powdered sugar, and vanilla until stiff peaks form and the mixture looks fluffy, about 2 minutes.
