Ingredients

  • 1 cup masala vada batter mix (or 1 cup urad dal flour + 2 tbsp rice flour)
  • ¾ cup water
  • ½ medium onion, finely diced
  • 1 whole green chili, minced
  • 2 cups neutral oil for frying
  • 1 pinch salt and black pepper to taste

Instructions

    Mix batter with water, onion, and green chili until thick and lump-free. Let sit 1 minute.

    Heat oil in a deep skillet or wok to 350°F (a pinch of batter should sizzle immediately).

    Drop spoonfuls of batter into hot oil, 3–4 at a time, without crowding the pan.

    Fry 2–3 minutes, turning halfway, until golden and crispy on all sides.

    Remove with a slotted spoon and drain on paper towels. Season with salt while still hot.
