Ingredients

  • 4 whole corn tortillas
  • ½ lb cooked shrimp, chopped
  • 1 whole avocado, ripe
  • 2 whole limes
  • ¼ cup red onion, finely diced
  • 3 tbsp cilantro, chopped
  • 2 tbsp neutral cooking oil

Instructions

    Heat oil in a skillet over medium-high until it shimmers. Fry each tortilla 60–90 seconds per side until golden and crispy.

    While tortillas cool, toss shrimp with diced red onion, cilantro, juice of 1 lime, salt, and pepper.

    Halve and pit the avocado, then slice each half into thin wedges.
