Ingredients

  • 12 count large shrimp, peeled and deveined
  • 2 count corn tortillas
  • 1 count avocado, ripe
  • ½ count mango, fresh
  • ½ count cucumber
  • 1 count lime
  • ½ tsp chili powder or Tajín seasoning
  • 2 tbsp neutral cooking oil

Instructions

    Pat shrimp dry. Toss with half the lime juice, salt, pepper, and chili powder.

    Heat oil in a skillet over medium-high until it shimmers. Add shrimp and sear 90 seconds per side without stirring—they'll turn pink and crispy at the edges.

    Fry tortillas one at a time in the same skillet until golden and crispy, ~90 seconds per side. Transfer to a plate.

    Slice avocado and cucumber. Dice mango into chunks. Arrange on each crispy tortilla base with the warm shrimp on top.
