Ingredients

  • 1 cup all-purpose flour
  • ½ lb ground beef
  • ½ medium onion, finely minced
  • 2 tbsp tomato paste
  • ¾ cup whole milk yogurt (or ayran)
  • 1 whole lemon
  • ½ tsp red pepper flakes
  • 2 cups fresh salad greens or mixed vegetables

Instructions

  1. 1

Mix flour with 0.5 tsp salt and 0.33 cup water until a soft dough forms, then knead 1 minute until smooth.

  2. 2

Brown ground beef with minced onion in a skillet over medium-high heat, breaking up with a spoon, ~4 minutes.

  3. 3

Stir in tomato paste, red pepper flakes, and a pinch of salt; cook 1 minute until fragrant.

  4. 4

Divide dough into 2 balls. Flatten each on parchment into a thin 8-inch round, ~0.25 inches thick.

  5. 5

Heat 1 tbsp oil in the same skillet over medium-high until shimmering, then pan-fry one flatbread 2 minutes per side until crispy and golden.

  6. 6

Spread cooked beef topping on each crispy flatbread, top with a dollop of yogurt, a squeeze of lemon, and fresh salad.
