Ingredients

  • 1.25 lbs shredded cooked beef (rotisserie or pre-cooked)
  • 8 pieces corn tostadas
  • 3 cups green cabbage, shredded
  • 2 whole fresh lime (juiced)
  • 1 whole jalapeño, minced (seeds removed for less heat)
  • ½ cup fresh cilantro, chopped
  • 2 tbsp neutral oil (for frying tostadas)

Instructions

    Toss shredded cabbage with lime juice, jalapeño, cilantro, and a pinch of salt. Set the slaw aside.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Fry tostadas in batches 30 seconds per side until golden and crispy. Transfer to a paper towel.

    Warm the shredded beef in the same skillet over medium for 2 minutes, stirring occasionally.

    Top each warm tostada with beef, then pile the lime cabbage slaw on top.
