Ingredients
- 4 count knackwurst sausages
- 1 count yellow onion, sliced
- 12 oz waxy potatoes (such as fingerling or red), halved
- 3 tbsp whole-grain mustard
- 2 tbsp olive oil
- ½ tsp caraway seeds (optional but traditional)

Heat oven to 425°F. Toss potatoes and onion with olive oil, salt, and pepper on a sheet pan.

Roast potatoes and onion for 10 minutes until they start to soften and edges brown slightly.

Brush knackwurst all over with mustard. Nestle them among the potatoes and onions.
