  • 1.25 cups granulated sugar
  • 1 whole orange (zested + juiced)
  • ¾ cup water
  • 2 cups neutral cooking oil (for frying)
  • 3 whole cardamom pods, crushed

Instructions

    Combine flour, yogurt, salt, and 2 tbsp water in a bowl. Knead into a soft dough; it should feel silky, not sticky.

    Transfer dough to a piping bag fitted with a small round tip. Heat oil in a deep skillet to 350°F (use a thermometer).

    Pipe 3-inch spirals directly into hot oil in batches, frying until golden brown on both sides, ~2 minutes total per batch.

    Combine sugar, water, orange juice, zest, and crushed cardamom in a saucepan. Heat over medium, stirring, until sugar dissolves.
