Ingredients
- 1 cup granulated sugar
- ¾ cup water
- ½ tsp orange zest
- 3 whole cardamom pods, cracked
- 2 cups neutral oil for deep frying
- 8 oz pre-made jalebi and tulumba mix (from Indian grocer)

Combine sugar, water, orange zest, and cardamom in a small saucepan over medium heat.

Stir until sugar dissolves, then simmer without stirring for 3 minutes until slightly syrupy. Set aside to cool.

Heat oil in a deep skillet or kadai over medium-high until a pinch of flour sizzles immediately when dropped in.

Using a jalebi funnel or piping bag, squeeze batter into hot oil in spiral or ring shapes. Fry 60 seconds per side until deep golden.

Remove with a slotted spoon and immediately immerse in warm cardamom syrup for 10 seconds, then transfer to a plate.

Serve within 30 minutes while still crispy on the outside and syrup-soaked inside.
