Ingredients

  • ¾ cup all-purpose flour
  • 2 cup vegetable oil (for frying, plus 2 tbsp for dough)
  • ½ cup water
  • 1 cup granulated sugar
  • 1 whole orange (zested + juiced)
  • 4 whole cardamom pods (crushed) or 0.25 tsp cardamom powder

    Heat 2 cups oil in a deep skillet to 325°F (use a thermometer; too hot burns them). While it heats, whisk flour, 0.5 tsp salt, and 2 tbsp oil with 0.5 cup water until a thin, pipeable batter forms.

    Pour batter into a squeeze bottle or piping bag fitted with a small round tip. Squeeze thin spirals (3-4 inches wide) directly into hot oil in quick overlapping circles.

    Fry spirals 60–90 seconds per side until deep golden, turning once with a slotted spoon. Remove to paper towels.

    In a saucepan, combine 1 cup sugar, orange juice, orange zest, and crushed cardamom. Simmer 2–3 minutes until syrupy and fragrant.
