Ingredients
- 2 cups all-purpose flour
- ¾ cup sesame seeds
- 3 tbsp neutral oil (for dough)
- ½ cup water
- ¾ cup honey
- 2 cups neutral oil (for frying)
- 1 tsp ground cinnamon

Mix flour, 0.5 cup sesame seeds, 3 tbsp oil, and salt in a bowl. Add water slowly, stirring until a smooth dough forms.

Knead dough on a clean surface 2 minutes until it becomes elastic and no longer sticky.

Roll dough into a thin sheet about 1/8 inch thick. Cut into 2-inch strips, then twist each strip into a loose knot.

Heat 2 cups oil in a deep skillet to 350°F. Working in batches, fry knots 60–90 seconds per side until deep golden brown.

Drain chebakia on paper towels. Warm honey in a small pot with cinnamon until fragrant, about 1 minute.

Toss warm chebakia in a bowl with 0.25 cup sesame seeds, then drizzle with warm cinnamon honey and serve immediately.
