Crispy Herring Toast

Ingredients

  • 200 g jarred herring in brine
  • 4 slices rye bread
  • ½ medium red onion
  • 2 tbsp white vinegar
  • 2 tbsp fresh dill
  • 2 tbsp butter

Instructions

    Slice the red onion into thin half-moons. Toss with vinegar and a pinch of salt.

    Toast the rye bread until golden and crispy on both sides.

    Butter each slice of toast while still warm.

  4. 4

    Layer 3–4 pieces of herring on each toast, then top with pickled onions.

    Sprinkle fresh dill over the top and serve immediately.
