Ingredients
- 2 cups frozen shelled fava beans (or canned, drained)
- ¾ cup fresh parsley (loosely packed)
- ¼ medium yellow onion
- 3 tbsp all-purpose flour
- ½ tsp cumin
- ½ cup neutral cooking oil (for frying)

Pulse fava beans, parsley, onion, flour, cumin, 0.5 tsp salt, and 0.25 tsp pepper in a food processor until coarse crumbles form—do not puree.

Scoop into 8 balls, then flatten each into a 2-inch patty. Rest on a plate while oil heats.

Heat oil in a skillet over medium-high until a small piece of mixture sizzles immediately when dropped in, ~2 minutes.
