Ingredients

  • 1.5 cans (15 oz each) canned fava beans (or chickpeas), drained and rinsed
  • 1 cup fresh parsley, roughly chopped
  • ½ cup fresh cilantro, roughly chopped
  • 3 tbsp all-purpose flour
  • ¼ cup tahini (for serving)
  • 3 tbsp neutral oil (for pan-frying)

Instructions

    Pulse fava beans, parsley, cilantro, flour, 1 tsp salt, and 0.5 tsp black pepper in a food processor until chunky (not smooth).

    Divide mixture into 8 patties, roughly 2 inches wide. Chill 5 minutes if time allows (improves structure).

    Heat oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

    Pan-fry patties 3 minutes per side without moving until edges turn golden brown and crispy.

    Whisk tahini with 3 tbsp water, 1 tbsp lemon juice, 1 clove minced garlic, and salt to taste until pourable.
