Ingredients

  • 1 jar (about 16 oz) jarred grape leaves in brine
  • 1 cup cooked rice (white or brown)
  • ½ cup fresh herbs (mint and parsley), finely chopped
  • ½ small yellow onion, minced
  • 1 whole lemon
  • 2 tbsp tomato paste

Instructions

  1. 1

Drain and rinse the grape leaves under cool water, then gently separate them.

  2. 2

Mix rice, herbs, onion, salt, pepper, and 1 tbsp lemon juice in a bowl until combined.

  3. 3

Lay a grape leaf flat, shiny side down. Place 1 tbsp filling near the center, fold sides in, then roll tightly toward the top.

  4. 4

Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering. Working in batches, sear rolls seam-side down until golden, ~2 minutes per side.

  5. 5

Whisk tomato paste, 1 tbsp lemon juice, and 0.5 cup water together. Pour over the rolls, cover, and simmer gently for 5 minutes until heated through.

  6. 6

Serve warm with lemon wedges on the side.
