Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 8 cloves garlic, minced
  • 1 tbsp ginger, minced
  • ¼ cup Greek yogurt
  • 1 tbsp kasuri methi (dried fenugreek leaves), crushed
  • ¾ tsp red chili powder
  • 1 whole lemon
  • ¼ cup fresh cilantro, chopped

Instructions

    Pat chicken thighs dry with a paper towel. Season with salt and pepper on both sides.

    Whisk garlic, ginger, yogurt, kasuri methi, chili powder, and 1 tbsp oil in a bowl until smooth.

    Coat chicken thighs evenly with the garlic paste, rubbing it into all crevices.

    Spread chicken on a sheet pan in a single layer. Roast at 425°F for 18–20 minutes until edges are deeply caramelized.
