Ingredients

  • ½ lb ground beef (80/20)
  • ½ medium onion
  • 2 slices american cheese
  • 2 count hamburger buns

Instructions

    Preheat oven to 425°F and toss frozen fries with salt and oil, spread on a sheet pan.

    Heat a heavy skillet over medium-high for 2 minutes until it smokes slightly.

    Form beef into two loose balls, place on skillet, then smash hard with a spatula until paper-thin with crispy browned edges.

    Season with salt and pepper, lay cheese on each patty, and flip once to melt the cheese.

    Thinly slice onion, push patties to the side, and quickly cook onion in the rendered fat until soft.

    Toast buns cut-side-down in the skillet for 30 seconds, then stack each burger with griddled onion and serve with hot fries.
