Ingredients
- 1 lb firm white fish (cod, haddock, or pollock), cut into 1.5-inch chunks
- ¾ cup all-purpose flour
- ¼ cup cornstarch
- ¾ cup sparkling water or ice water
- 2 cups neutral oil for frying
- 1 whole lemon, cut into wedges

Pat fish chunks dry on paper towels. Season generously with salt and black pepper on all sides.

Whisk flour, cornstarch, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl. Pour in sparkling water, whisking until smooth.

Heat oil in a heavy pot or deep skillet to 350°F, about 4–5 minutes. Water flicked into the pan should sizzle immediately.

Working in batches, dip fish chunks into batter, coating fully. Slide into hot oil and fry 2–3 minutes until deep golden brown.
