Ingredients

  • 1 lb cod or haddock fillets, skinless
  • ½ cup all-purpose flour
  • 2 cups vegetable oil for frying
  • ½ cup mayonnaise
  • 1 whole lemon (zested + juiced)

    Cut fish fillets into 2-inch pieces. Pat dry with paper towels.

    Stir mayonnaise, lemon zest, and lemon juice in a small bowl. Season with salt and pepper.

    Pour flour into a shallow dish. Season generously with salt and pepper.

    Heat oil in a heavy pot to 350°F (use a thermometer). Oil should shimmer and move quickly.
