Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup whole milk
  • 2 cups neutral oil for frying
  • ¼ cup granulated sugar
  • 2 tsp ground cinnamon
  • 4 oz whole milk chocolate, chopped
  • ¼ cup heavy cream

    Mix flour with milk and a pinch of salt until a smooth, thick batter forms.

    Heat oil in a heavy skillet to 375°F. Test with a wooden skewer—tiny bubbles should immediately form.

    Fill a churrera or piping bag with batter. Pipe 6-inch lengths directly into hot oil, using scissors to cut.

    Fry until golden brown on both sides, ~2 minutes total, then transfer to a paper-towel-lined plate.

    Mix sugar and cinnamon on a shallow plate. Toss warm churros in the mixture until well coated.
