Ingredients
- 1.5 lb russet potatoes, cut into 1/4-inch sticks
- 2 cups neutral cooking oil
- 1 tbsp cinnamon
- 3 tbsp granulated sugar
- ¾ cup dulce de leche
- 4 oz dark chocolate, chopped
- 1 tbsp butter
- ½ tsp sea salt
Instructions
- 1
Pat potatoes very dry with paper towels — moisture prevents crisping.
- 2
Heat oil in a deep skillet or Dutch oven to 350°F. Test with one fry; it should sizzle immediately.
- 3
Fry potatoes in batches for 8–10 minutes until golden and crispy; don't crowd the pan.
- 4
Drain on paper towels. Toss with cinnamon sugar and sea salt while still hot.
- 5
Heat dulce de leche and chocolate with butter in a small pot over low heat, stirring until melted and smooth.
- 6
Transfer fries to a serving platter. Drizzle warm chocolate-dulce sauce over the top and serve immediately.
