Ingredients
- 1 lb cooked shredded pork (rotisserie or leftover)
- 1 cup fresh pineapple, diced small
- 1.5 cups white cheddar or oaxaca cheese, shredded
- 4 count flour tortillas (8-inch)
- ½ count red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 1 tbsp guajillo or ancho chili powder

Toss the pork with chili powder, salt, and a pinch of pepper until evenly coated.

Heat 1 tbsp oil in a skillet over medium-high until shimmering, about 60 seconds.

Lay a tortilla flat and sprinkle 1/3 cup cheese down the center, then add 2–3 tbsp seasoned pork and a spoonful of pineapple on top.

Fold the tortilla in half and slide into the hot skillet. Cook 2 minutes per side until the cheese melts and tortilla turns golden-brown and crispy.

Transfer to a plate and repeat with the remaining 3 tortillas, adding oil between batches if needed.
