Ingredients
- 2 4-oz pieces pork cutlets (or thin boneless chops)
- 2 oz mozzarella cheese, sliced
- ⅓ cup all-purpose flour
- 1 large eggs
- ¾ cup panko breadcrumbs
- 2 cups green cabbage, shredded
- 2 tbsp rice vinegar
- 1.5 cups mixed fresh tomatoes & cucumbers, sliced

Place pork cutlets between two sheets of plastic wrap and pound to 1/4-inch thickness with a mallet or heavy pan.

Set up three shallow bowls: one with flour, one with beaten egg, one with panko mixed with a pinch of salt and pepper.

Coat each cutlet in flour, shake off excess, dip in egg, then press firmly into panko until fully coated on both sides.

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds, then carefully place cutlets in the pan.
