Ingredients

  • 1 pound cooked boudin sausage
  • 16 count wonton wrappers
  • ½ pound fresh pineapple, peeled and cut into spears
  • ½ cup mayonnaise
  • 2 tbsp hot sauce (cayenne or Louisiana style)
  • 2 tsp neutral cooking oil (for air fryer)

Instructions

    Slice cooled boudin into 16 pieces, roughly 3 inches long. Pat dry with paper towels.

    Place a boudin piece on each wonton wrapper corner, roll tightly, then fold sides in and seal edges with water.

    Toss egg rolls lightly with oil, then air-fry at 380°F for 8 minutes, shaking basket halfway. Surface should look golden and crispy.

    While egg rolls cook, char pineapple spears in a dry skillet over medium-high for 2 minutes per side until caramelized.

    Stir hot sauce into mayonnaise until smooth. Serve egg rolls hot with spicy mayo and grilled pineapple on the side.
