Ingredients
- 1 pound cooked boudin sausage
- 16 count wonton wrappers
- ½ pound fresh pineapple, peeled and cut into spears
- ½ cup mayonnaise
- 2 tbsp hot sauce (cayenne or Louisiana style)
- 2 tsp neutral cooking oil (for air fryer)

Slice cooled boudin into 16 pieces, roughly 3 inches long. Pat dry with paper towels.

Place a boudin piece on each wonton wrapper corner, roll tightly, then fold sides in and seal edges with water.

Toss egg rolls lightly with oil, then air-fry at 380°F for 8 minutes, shaking basket halfway. Surface should look golden and crispy.
