Ingredients

  • 12 oz boudin sausage (cooked), cut into 4-inch lengths
  • 8 count egg roll wrappers
  • 3 tbsp neutral cooking oil
  • ¼ cup mayonnaise
  • 2 tbsp hot sauce (Crystal, Frank's, or similar)
  • ½ tsp fresh lime juice

Instructions

    Mix mayo, hot sauce, and lime juice in a small bowl until combined. Set aside.

    Lay an egg roll wrapper on a flat surface with one corner pointing toward you.

    Place one piece of boudin on the center-lower part of the wrapper and roll up tightly, tucking in the sides as you go.

    Seal the top corner with a dab of water pressed gently onto the wrapper. Repeat with remaining boudin and wrappers.

    Heat oil in a skillet over medium-high until it shimmers. Fry egg rolls until golden brown and crispy on all sides, about 2 minutes per side.

    Transfer to a paper towel-lined plate. Serve hot with the hot sauce dip.
