  • 16 wrappers egg roll wrappers
  • 3 tbsp neutral cooking oil
  • ¼ cup honey
  • 2 tbsp hot sauce (Frank's or similar)
  • 1 tbsp butter
  • 2 stalks green onions, chopped

Instructions

    Brown boudin in a skillet over medium-high heat, breaking it into small pieces, until no pink remains, ~5 minutes.

    Spoon cooled boudin into center of each egg roll wrapper, leaving a 1/2-inch border on all sides.

    Wet the wrapper edges with water, fold corners toward center, then roll tightly and seal the seam.

    Heat oil in a large skillet over medium-high until shimmering, then pan-fry egg rolls in two batches until golden-brown and crispy, ~2 minutes per side.
