Ingredients

  • 1 lb russet potatoes
  • 6 oz pork sausage links
  • 4 whole eggs
  • ½ whole yellow onion
  • ½ whole bell pepper (red or green)
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper

Instructions

    Cut potatoes into 1/2-inch cubes. Dice onion and bell pepper into small pieces.

    Heat olive oil in a 12-inch cast iron skillet over medium-high until shimmering, ~1 minute.

    Add potato cubes and cook without stirring for 4 minutes until bottoms start turning golden.

    Stir potatoes, then add diced sausage, onion, and pepper. Cook for 6 minutes, breaking up sausage, until potatoes are tender and sausage is browned.

    Push mixture to the edges and crack eggs into the center. Season with salt and pepper.

    Cover skillet and cook for 3 minutes until egg whites set but yolks still jiggle slightly.
