Ingredients
- 1 lb russet potatoes
- 6 oz pork sausage links
- 4 whole eggs
- ½ whole yellow onion
- ½ whole bell pepper (red or green)
- 2 tbsp olive oil
- 1 pinch salt and black pepper

Cut potatoes into 1/2-inch cubes. Dice onion and bell pepper into small pieces.

Heat olive oil in a 12-inch cast iron skillet over medium-high until shimmering, ~1 minute.

Add potato cubes and cook without stirring for 4 minutes until bottoms start turning golden.

Stir potatoes, then add diced sausage, onion, and pepper. Cook for 6 minutes, breaking up sausage, until potatoes are tender and sausage is browned.
