Ingredients
- ½ lb ground beef
- 3 tbsp butter
- 3 tbsp all-purpose flour
- ½ cup whole milk
- ¾ cup panko breadcrumbs
- 1 large egg
- 2 tbsp dijon mustard

Brown ground beef in a skillet over medium-high, breaking it up as it cooks, until no pink remains, about 5 minutes.

Melt butter in the same skillet, sprinkle flour over, and stir constantly for 1 minute until it smells nutty.

Pour milk in slowly while whisking to avoid lumps. Stir in cooked beef and mustard. Cook until thick and pulling from the sides, 2 minutes.

Spread mixture on a plate and refrigerate for 10 minutes until cool enough to shape.

Form 8 cylinders from the beef mixture. Beat the egg in a bowl, then roll each cylinder in egg, then in breadcrumbs.

Pan-fry kroketten in a skillet with oil over medium-high, 2–3 per batch, until golden brown all over, 2 minutes per side.
