Ingredients

  • ½ lb ground beef
  • 1 lb russet potatoes, peeled
  • ½ medium yellow onion
  • ¾ cup panko breadcrumbs
  • 2 tbsp tonkatsu or Worcestershire sauce
  • 1 large egg

    Dice potatoes into 1-inch chunks, cover with cold salted water, and bring to a boil.

    While potatoes cook, dice onion fine and sauté in a dry pan over medium heat until soft.

    Add ground beef to the pan, break it up with a spoon, and cook until no pink remains, ~5 minutes.

    Drain potatoes, mash them smooth, then fold in beef, onion, and tonkatsu sauce until combined.

    Shape mixture into 4 ovals (2–3 inches long). Whisk egg in one bowl, spread panko in another.

    Coat each croquette in egg, then roll in panko. Pan-fry in oil over medium-high heat until golden all over, ~4 minutes.
