Ingredients

  • 1 cup cooked beef (rotisserie or leftover roast), finely shredded
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ½ cup whole milk
  • ½ cup panko breadcrumbs
  • 3 tbsp dijon mustard (for serving)

Instructions

    Melt butter in a small saucepan over medium heat. Add flour, stir constantly for 1 minute until light golden.

    Whisk in milk slowly until no lumps remain. Add shredded beef, salt, and pepper. Stir until thick paste forms, ~2 minutes.

    Spread beef mixture on a plate and refrigerate while you prepare to fry, about 3 minutes.

    Shape mixture into 4 logs (about 3 inches long). Roll each in panko until fully coated.

    Heat oil in a large skillet over medium-high until shimmering. Fry croquettes 90 seconds per side until deep golden brown.
