Ingredients

  • 1 lb white fish fillets (halibut, cod, or mahi)
  • ¾ cup all-purpose flour
  • ¾ cup lager beer (or sparkling water)
  • 2 whole lime (zested + juiced, divided)
  • ½ cup sour cream
  • ½ head green cabbage
  • 8 whole corn tortillas
  • 2 cups neutral oil for frying

Instructions

    Mix flour, beer, 1 lime's zest, salt, and cayenne in a bowl until smooth batter forms.

    Whisk sour cream with juice from both limes and a pinch of salt until smooth.

    Thinly slice cabbage and toss with a small squeeze of lime juice and salt.

    Heat oil in a deep skillet to 350°F. Dredge fish in batter and fry until golden, 3–4 minutes per side.

    Warm tortillas in a dry pan over medium heat until pliable, ~30 seconds per side.
