Ingredients

  • 3 strips bacon strips
  • 4 large egg whites
  • 1.5 cups fresh spinach
  • ½ tbsp butter
  • 1 pinch salt and black pepper
  • ¼ cup cheddar cheese, shredded (optional)

Instructions

  1. 1

Cook bacon in a 10-inch nonstick skillet over medium-high until crispy, about 4 minutes per side.

  2. 2

Transfer bacon to a plate and roughly chop. Pour off all but 1 tsp bacon fat from the skillet.

  3. 3

Add spinach to the hot skillet and stir until wilted, about 60 seconds. Transfer to a plate.

  4. 4

Crack egg whites into a bowl, add a pinch of salt and pepper, and whisk until frothy, about 30 seconds.

  5. 5

Add butter to the skillet over medium heat. Once foaming, pour in egg whites and let them sit undisturbed for 60 seconds.

  6. 6

Gently push cooked egg toward center, tilting skillet so uncooked egg flows to edges, about 90 seconds total.

  7. 7

When surface is just set but slightly wet, scatter bacon, spinach, and cheese on one half.

  8. 8

Fold omelette in half and slide onto a plate. Serve immediately.
