Ingredients
- 3 strips bacon strips
- 4 large egg whites
- 1.5 cups fresh spinach
- ½ tbsp butter
- 1 pinch salt and black pepper
- ¼ cup cheddar cheese, shredded (optional)

Cook bacon in a 10-inch nonstick skillet over medium-high until crispy, about 4 minutes per side.

Transfer bacon to a plate and roughly chop. Pour off all but 1 tsp bacon fat from the skillet.

Add spinach to the hot skillet and stir until wilted, about 60 seconds. Transfer to a plate.

Crack egg whites into a bowl, add a pinch of salt and pepper, and whisk until frothy, about 30 seconds.

Add butter to the skillet over medium heat. Once foaming, pour in egg whites and let them sit undisturbed for 60 seconds.

Gently push cooked egg toward center, tilting skillet so uncooked egg flows to edges, about 90 seconds total.
