Ingredients
- 6 whole eggs
- ¾ cup gruyère or sharp cheddar, shredded
- 1 cup spinach, roughly chopped (or arugula)
- ½ small red onion, thinly sliced
- 2 tbsp fresh herbs (dill, chives, or parsley, chopped)
- 3 tbsp whole milk

Preheat your broiler. Whisk eggs with milk, salt, and pepper until frothy.

Heat butter in a 10-inch nonstick skillet over medium-high until it foams, ~90 seconds.

Add onion slices, sauté until soft and edges brown slightly, about 3 minutes.

Add spinach and stir for 30 seconds until wilted, then pour egg mixture over it evenly.

Cook without stirring until edges are set and center still jiggles slightly, 3–4 minutes.
