Crispy Bacon Quiche
A TikTok-easy quiche that skips the crust and oven wait. Whisk eggs with cream, layer crispy bacon and cheese in a skillet, then bake until the edges set and the center jiggles — done in under 30 minutes.

Ingredients
- 6 slices bacon, sliced
- 8 large eggs
- ½ cup heavy cream
- 1 cup gruyere or cheddar, shredded
- ½ medium yellow onion, diced small
- 1 tbsp fresh thyme or chives, chopped
- 1 pinch salt and black pepper to taste

Cook bacon in a 10-inch nonstick or cast iron skillet over medium-high until crispy, ~6 minutes. Chop and set aside; drain all but 1 tbsp fat.

Add diced onion to the same skillet. Cook, stirring, until softened and fragrant, ~3 minutes.

Whisk eggs with cream, salt, pepper, and thyme in a bowl until smooth. Pour into the skillet.

Sprinkle bacon and cheese evenly over the egg mixture. Let the skillet sit on the burner for 2 minutes without stirring — edges will start to set.

Transfer to a 400°F oven or oven-safe skillet. Bake until the edges are set and the very center still jiggles slightly, ~8 minutes.
