Ingredients

  • 2 whole butter croissants, large
  • 4 slices bacon slices
  • 2 slices sharp cheddar cheese
  • 2 whole eggs
  • 2 cups fresh berries and melon
  • ½ tbsp butter
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

    Cook bacon in a skillet over medium-high until edges curl and surface is golden, ~5 minutes.

    Transfer bacon to a paper towel. Drain all but 1 tbsp fat from the skillet.

    Crack eggs into the skillet, season with salt and pepper. Cook until whites set but yolks still jiggle, ~3 minutes.

    Warm croissants on the skillet or in a toaster oven. Slice each lengthwise without cutting all the way through.

    Layer cheddar, bacon, then fried egg into each croissant. Serve hot with fresh fruit on the side.
