Ingredients

  • 4 strips bacon strips
  • 2 slices sourdough bread
  • 1 tbsp butter
  • 1 whole avocado
  • ½ cup cherry tomatoes
  • 2 whole eggs
  • 1 cup mixed salad greens

Instructions

    Cook bacon in a skillet over medium-high until crispy, about 6–7 minutes. Transfer to a paper towel.

    Toss cherry tomatoes with a pinch of salt and pepper. Spread on a sheet pan and roast at 400°F until blistered, about 8 minutes.

    Toast sourdough slices until golden, then spread with butter while still warm.

    Halve the avocado, scoop flesh into a bowl, and smash with a pinch of salt and black pepper until chunky.

    Fry eggs in the bacon fat over medium-high until whites set but yolks still jiggle, about 3–4 minutes.
