Ingredients

  • 12 oz Oaxaca cheese (or fresh mozzarella), shredded
  • 4 oz sharp cheddar, shredded
  • ½ cup whole milk
  • 2 whole poblano peppers, roasted, peeled, chopped
  • 2 whole jalapeños, roasted or fresh, diced
  • 4 oz cream cheese
  • ½ whole lime (juiced)

Instructions

    Combine shredded Oaxaca, cheddar, and cream cheese in a bowl.

    Pour milk over the cheese and microwave in 30-second pulses, stirring between, until melted and smooth (about 1–2 minutes total).
