Ingredients
- 1 lb Italian sausage, hot or mild, casings removed
- 12 oz waxy potatoes (such as fingerling or Yukon Gold), diced
- 4 cups chicken broth
- ½ cup heavy cream
- 4 oz kale, chopped (about 3 cups)
- ¼ tsp red pepper flakes
- 2 tbsp parmesan, grated (optional garnish)

Brown sausage in a large pot over medium-high heat, breaking it apart with a spoon, until no pink remains, about 5 minutes.

Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 8 minutes.

Stir in cream and red pepper flakes. Simmer for 2 minutes until heated through.
