Ingredients

  • 1 lb Italian sausage, hot or mild, casings removed
  • 12 oz waxy potatoes (such as fingerling or Yukon Gold), diced
  • 4 cups chicken broth
  • ½ cup heavy cream
  • 4 oz kale, chopped (about 3 cups)
  • ¼ tsp red pepper flakes
  • 2 tbsp parmesan, grated (optional garnish)

Instructions

    Brown sausage in a large pot over medium-high heat, breaking it apart with a spoon, until no pink remains, about 5 minutes.

    Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 8 minutes.

    Stir in cream and red pepper flakes. Simmer for 2 minutes until heated through.

    Add kale and stir until wilted, about 1 minute. Season with salt and pepper to taste.

    Ladle into bowls and top with parmesan if desired. Serve immediately.
