Ingredients
- 6 slices bacon, chopped
- 1.5 lbs potatoes, diced into 1/2-inch cubes
- 1 medium onion, diced
- 4 cups chicken broth
- ½ cup heavy cream
- 1 cup sharp cheddar, shredded
- 3 tbsp fresh chives, chopped

Cook bacon in a large pot over medium-high until crispy, ~6 minutes. Remove with a slotted spoon; set aside.

Pour off all but 1 tbsp bacon fat. Add diced onion; cook until softened, ~3 minutes, stirring occasionally.

Add diced potatoes and chicken broth. Bring to a boil, then simmer uncovered until potatoes are very tender, ~12 minutes.

Stir in heavy cream and shredded cheddar until cheese melts completely. Season with salt and pepper to taste.
