Ingredients
- 6 slices bacon strips
- 1.5 lbs russet potatoes
- 1 whole onion, medium
- 4 cups chicken broth
- ½ cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 pinch salt and black pepper to taste

Chop bacon into 1-inch pieces. Dice potatoes into 1/2-inch cubes. Dice onion into 1/4-inch pieces.
