Ingredients

  • 1 lb Italian sausage, hot or mild
  • ½ medium yellow onion, diced
  • 2 medium carrots, diced
  • 1 lb potatoes, diced into 1/2-inch cubes
  • 4 cups fresh kale, torn into bite-sized pieces
  • ½ cup heavy cream

Instructions

    Brown sausage in a large skillet over medium-high heat, breaking it into 1/2-inch pieces as it cooks, about 5 minutes.

    Add onion and carrots, cook until softened and fragrant, about 3 minutes.

    Pour in 4 cups water and add potatoes. Bring to a boil, then simmer until potatoes are tender, about 6 minutes.

    Stir in kale and cook until wilted and bright green, about 1 minute.

    Pour in cream, season with salt and pepper to taste, and warm through for 30 seconds.
