- 1 lb Italian sausage, hot or mild
- ½ medium yellow onion, diced
- 2 medium carrots, diced
- 1 lb potatoes, diced into 1/2-inch cubes
- 4 cups fresh kale, torn into bite-sized pieces
- ½ cup heavy cream

Brown sausage in a large skillet over medium-high heat, breaking it into 1/2-inch pieces as it cooks, about 5 minutes.
