Ingredients
- 1 lb Italian sausage (bulk or casings removed)
- 1 lb Red potatoes, halved
- ½ medium Yellow onion, diced
- 2 medium Carrots, sliced into 1/4-inch rounds
- 4 cups Fresh kale (tuscan or lacinato), chopped, ribs removed
- ½ cup Heavy cream or half-and-half

Brown sausage in a large skillet over medium-high heat, breaking it into bite-sized pieces with a spoon, 5–6 minutes.

Add potatoes, onion, and carrots. Stir to coat in the sausage fat, then pour in 4 cups water and a pinch of salt.

Bring to a boil, then reduce heat and simmer uncovered until potatoes are fork-tender, 8–10 minutes.
